Menu Plan Monday – 4/12 – 4/30

April 12th – April 30th

 

12th –  Easy Lasagna /Garlic Bread/Strawberry Romaine Salad

Salad Mix (1 head romaine lettuce, 2 bunches of fresh spinach)
1 pint fresh strawberries, sliced
1/2 cup mayonnaise
1/3 cup white sugar
2 tablespoons white wine vinegar
1/4 cup milk
2 tablespoons poppy seeds

In a large salad bowl, combine the romaine, spinach, and strawberries. In a jar with a tight fitting lid, combine mayonnaise, vinegar, sugar, milk, and poppy seeds. Shake well and pour the dressing over the salad. Toss until evenly coated.

13th – Seafood Alfredo

14th – Easy Beef Enchiladas & Spanish Rice

15th – Taco Pasta

  • 1 pound ground beef
  • 1 package (1-1/4 ounces) taco seasoning
  • 1 can (15 ounces) tomato sauce
  • 1 package (8 ounce) shell macaroni, cooked and drained ( I used a gf brown rice pasta)
  • 1 can (4 ounces) chopped green chilies
  • 1 1/2 cups shredded cheddar cheese

In a skillet, brown ground beef over medium heat. Drain and add taco seasoning, tomato sauce, and green chilies. Stir in cooked macaroni. Place in a 9×13 pan. Top with cheese. Bake at 350° for 30 minutes or until heated through.

16th – Friday-  White Castle Sliders/ Fries

17th – Saturday – Slow Cooked Pork Chops –  Quick Seasoned Rice  – Green Beans (Crock Low 6-8 Hours)

18th – Sunday – Cheesy Spirals / Salad

19th – Monday – Country Ham and Cheese Macaroni Casserole – Carrots

20th – Pancakes / Sausage/ Eggs

21st –  Chicken Burritos

22nd – Meatloaf/Mashed Potatoes/Corn

23rd – Friday – Tacos / Taco Salad

24th -Mom Gone- Hot Dogs/ Chip and Dip

25th -Mom Gone- Spaghetti and Garlic Bread

26th – Amy Cooking- Pizza Order (coupon on side of fridge)

27th – Amy Cooking-

28th – Chicken Salad Pitas

29th – Taco Soup/ With Biscuits

  • 1 pound of ground beef
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 48 ounce V-8, I use low sodium
  • 1 can corn, drained
  • 1 can of kidney beans, drained
  • 1 packaged of taco seasoning (or use homemade)
  • 1 teaspoon of beef bouillon
  • 1  1/2 cups cooked rice
  • cheese, sour cream, and tortilla chips optional for serving

Cook beef, onion, and green pepper until beef is done. Drain. Add V-8, corn, beans, taco seasoning, and bouillon.

If using crockpot cook on low for about 3 hours, add cooked rice and cook on low for 30 more minutes. If using the stove top, cook for about 30 minutes, add cooked rice, and cook until heated through. Serve with cheese, sour cream, and chips.

30th – Friday – Hamburgers/Potato Salad/ Chips

March 29th – April 3rd

 

I am so happy it is beginning to feel like Spring here in Minnesota!  Last week went pretty well, but I was not home for any of the meals.   Work was crazy and I was trying to meet my deadlines.   This week will be very similar.  I am home every morning until our PCA comes after she is done with classes.  So hopefully I will get alot done each morning and work for at least 6 hours at the office eaach evening.   So I might have to change my menu up a bit, as I need things hubby can just throw in the oven in my absence. 

 

I made two new things last week and both were hits!!   The kids all really like the Broccoli Casserole.  It was very easy to make.  I went to a friends house on Friday night and made the Sandwich Ring for everyone before I left.  They said it was really good, but I will have to make two or three in the future if it is going to be a Friday Movie Night Meal. 

 

 

29 – Country Ham and Cheese Macaroni Casserole – Carrots

 

30 –  Swiss Chicken   / Mixed Vegetables

Last week went well, I made all but one of my planned meals.  I did not try any new recipes last week.  My work life it just too busy and I am getting home too late.  I am trying to stretch my monthly grocery shopping to last an extra week.  Today, we went to Walmart and purchased some dog food and a few groceries (millk) to make it until the 10th of April.   I spent approximately $55.00, which I thought was pretty good.   I still need to buy a couple of things, but that should total less than $10.00 or less. 

 

22 – Easy Lasagna /Garlic Bread  (make the night before)

    

23  – Easy Beef Enchiladas & Spanish Rice

 

24 – Chicken Salad Sandwiches

 

25 – Easy Chicken and Rice/ Peas

 

26- Sandwich Ring/ Chips and Dip

 

27 – Pork Loin Roast, Broccoli Casserole / Salad

 

BROCCOLI CASSEROLE
3/4 lb. Velveeta™ cheese, cubed
2 small boxes frozen chopped broccoli
1 cup cooked minute or brown rice
1 onion, chopped
1 stick butter
1 can cream of chicken soup
1/2 cup milk
Saute onions in butter. Cook broccoli as package directs,
drain. Cook rice, combine all ingredients; pour into 9×13 in.
dish. Bake at 350 for 45 minutes or until brown. Yum! Yum!

Magnuson Gala

Last weekend, hubby and  I went to the Magnuson Christian School Gala.   It was a very successful fundraiser for my son’s school.  We won two items in the silent autcion.  We won a night at the Rivertown Inn in Stillwater.  It is a very nice Bed and Breakfast.  I have always wanted to stay at the B&B so I am looking forward to it.   We hope to take advantage of this some time this summer when we can enjoy some time wandering around Stillwater.   We will have to see if Josh will watch Tommy for us.   I also purchased a bed at the “Girl’s All About Me Retreat” and will be heading up to Starbuck with a group of moms!

MENU FOR MARCH 8th – 14th

Last week is a blur.  I worked many extra hours and didn’t stick strickly to my menu, but that is ok!   New recipes last week include  Peppy Pizza Pasta  and White Castle Sliders which were both a hit.  We ended up ordering pizza on Saturday as I was just too tired!  All other meals were at home.  

 

This week promises to be busy again so I am very thankful my menu is ready to go!  I already have the roast thawing in the fridge for Tuesday’s French Dip Sandwiches.   Hope you all have a wonderful week!

Total on Groceries – 514.52

For the month of March – $128.63 per week

I am over budget so I will need to stretch the meals to last for 5 weeks, which will bring our budget down to 102.91/week to feed our family of 6.

Hopefully, due to finding some meat on sale at Sam’s our food budget for April should be less.

Where Has February Gone????

 February 23rd, already????  Where has the month gone???  I hardly get time to blog anymore beyond my menu.  That really is too bad since I love blogging and it is the closest I think I will ever come to scrapbooking or journaling. 

The first week of February brought Tommy’s Animal Wax Museum at school.  It was very cute!!   All the kids looked great.   What a wonderful school and teacher Tommy has this year.

Our taxes are done and we have received our state and federal returns already.   The money has all been earmarked for upcoming expenses.   We paid our car insurance in full so we could get our discount, saved some money for Christmas, and paid on our loans.  I had hoped to have money left to buy a new dresser for Tommy, but will have to save up for that.   I spent one Saturday getting all the paper in our home under control.   I shredded everything in the file cabinet and got folders set for the new year. 

We decided we will be having a garage sale in June.  It is time to get rid of much of what is in our garage and things.   Maybe next winter we will park in our garage???  I started by working on Tommy’s room for one day so far.  I removed 1 garbage bag of junk and 2 bins of books.   I donated one bin to Tommy’s school and will sell the rest in the garage sale.   There is still a long ways to go in his room.

photo470 As a family we filled bags of food to go to Haiti through the agency Feed My Starving Children.  This organization is a local and provides food to 6 countries.   It was alot of fun.  Tommy, Josh, Amy, Hubby and I all went and donated our time to this worthy cause with other families from Tommy’s school.

And to end my month on a high note (sarcasm), after coming home from taking Tommy to the eye Doctor to get his new glasses, I fell on the ice.   I hit my head,  earned a trip to the ER and now am home recovering from a concussion.   So nothing like having the month go out with a bang!!   So I am home nursing a headache and very sore body for a few days.  I am so very happy that I did not break a hip or anything considering my history of osteoporosis.   That is a blessing…

This coming weekend I hope to be feeling well enough to get groceries for the month and work at Church on Sunday for Magnuson Sunday.
