Menu Plan Monday: January 3rd

Happy New Year!!  It feels good to be getting back to my familiar routines.  I truly am a creature of habit.  I feel very out of control if I don’t have a plan for meals each night.  By the time I get home from work, it is a mad dash to get supper on the table before 7:00.   This year I am trying to add more vegetables and fruit to our diet.  My kids are all great about eating most things, so it is just a matter of planning and making more.  I would also like to make dessert once a week.   I will plan it and we will see how that goes!  

We had a wonderful Christmas with family.  The food was amazing!  My BIL, Danny is a great cook and always brings the main course for our Christmas Celebration.  I will be off for 2 weeks over the holidays.  the first week I truly spent reading,  relaxing and hanging out my with kiddo.   I am now starting week two of vacation and this week means work! We are getting my Father in Law moved into the assisted living facility and his wife will join him in a few weeks.  So this weekend will be spent packing and moving.   I have two more days off and those will be spent getting things done around my house before returning to work.  I want to return to work being caught up on the laundry as well as a few other things.

Menu Plan

Thurday 30 – Taco Bake, Corn and Salad  (very quick meal – Good at to Site) 

Friday – 31 – Frozen Pizza – Packing Day at Inlaws

Saturday – 1 – Order in – Moving Day for Inlaws

Sunday – 2 – Rotisserie Chicken/ Mac n Cheese/ Green Beans – Apple Pie –

Mon -3 – Baked Tilapia, Uncle Ben’s Rice and Veggie

Baked Tilapia (good add to site)

3/4 cup soft bread crumbs
1/3 cup grated Parmesan Cheese
1 tsp garlic salt
1 tsp. Oregano
4 Tilapia Fillet

In a shallow bowl, combine the bread crumbs, cheese, garlic salt, and oregano.  Coat Fillets in crumb mixture.  Place on a baking sheet coated with cooking spray. 

Bake at 425 for 8-12 minutes or until fish flake easily with a fork.

Tuesday – 4 – Paprika Chicken with Sour Cream Sauce, Rice, Brussels Sprouts, Salad  (hubby liked…not sure I do)

Wednesday – 5 – Working Late – Baked Teriyaki Chicken (very Good add to site) served with Hash Brown Casserole  (very Good Add to site) & Broccoli

Thursday – 6 – Chilli / Corn Bread

Friday – 7 – Chilli Dogs/ Fries

Sat -8 – Pioneer Woman’s Chicken Strips and Vegetables with Cheese Sauce

2 Pkg Frozen California – Blend Vegetables
1 – 8 oz of Velveeta Cubed
3 Tbsp. Milk

Microwave Vegetable blend according to the package directions.  In a small saucepan, combine cheese and milk. Cook and stir over low heat until melted.  Serve with vegetables. 

Sunday – 9 – Pioneer Woman’s Chicken Spaghetti / Salad  – Triple Chocolate Cake

1 pkg White Cake Mix
1/3 cup sugar
4 eggs
1 cup (8oz) sour cream
2/3 canola oil
2 Tbsp. Baking Cocoa
1/2 Cup Miniature Semisweet Chocolate Chips
1 cup Chocolate Frosting
2 Tbsp milk

In a large bowl. combine the cake mix, sugar, eggs, sour cream and oil.  Beat on low for 1 minute; beat on medium for 2 minutes.  Pour half of batter in to a large bowl.  Stir in cocoa until blended. Fold chocolate chips into white cake batter.

Spoon batter alternately into a greased and floured 10 inch fluted tube pan.  Bake at 350 for 45-50 minutes or until a toothpick inserted near the center comes out clean.  Cool for 15 minutes before removing from pand to a wire rack to cool completely. 

In a small bowl, combine frosting and milk.  Spoon over top of cooled cake. 

Monday- 10 – Book Group – Mom’s Mac and Cheese / Brats

Tuesday -11 –  South Seas Pork Chops, Pineapple Slices, Green Beans, Salad

Wednesday -12 – Meat Loaf/ Mashed Potatoes/ Corn

Thursday – 13 – Board Meeting – Spaghetti

Friday – 14 – Sloppy Joes , Chips

November 21  – November 28,  2010 

Happy Thanksgiving, friends.  We have had a busy weekend again with getting ready to go to my parents for Thanksgiving and roller skating party.  This morning I volunteered at the church info desk and had many suggestions for my menu from friends at church.  That sure made it easier to plan our meals!   I wish I could plan meals with friends every week!  So we will be trying a few new recipes this week. 

Sunday, 21st – Ham and Hashbrown Casserole – Carrots

Monday, 22st – Tater Tot Hotdish

Tuesday, 23rd – Spaghetti and Meatballs, Garlic Bread Sticks 

Wednesday, 24th  – Out of Town – heading to SD

Thursday, 25th – Out of Town

Friday, 26th – Out of Town

Saturday, 27th – Out of Town

Sunday, 28th  – Out of Town – Soup and Grilled Chesse Sandwiches

Tuesday, 30th – Rotisserie Chicken (crockpot),  Rice Dish and Peas

Wednesday, 1st – Jeff’s Chicken Casserole – Green Beans

Layer cream of chicken soup
Diced uncooked chicken breast
Cr of Chicken Soup
Stovetop Stuffing

Bake at 350 for 1 hour. 

Thursday, 2nd – Tacos for a Crowd

Friday, 3rd –  Steak and Cheese Sandwiches with Fries

Saturday, 4th – Oven Fried Fish and Chips

Festival – 7.62

Walmart – $16.46

Grand Total for 2 weeks:  135.61 /2 = $67.81 per week for family of 5

Menu Plan Monday: September 13th

As you can see, last weeks pantry challenge did not completed empty out my freezer, but hopefully after the next two weeks it will be.  At least it is now empty enough so I can see everything I have in there and plan meals around that. 

Here is what is on our menu this week:

Monday – Chicken Salad Roll-ups/Potato Chips/Grapes  (E-Mealz A-342)

Tuesday, 14th – Club Salad, Swiss Cheese Bagels, Grapes (E-Mealz P-338)

Wed, 15th – Broccoli & Potato Soup/ Garlic Toast ((E-Mealz P-340)

Garlic Bread

  • 1 loaf ciabatta* or Italian bread
  • 1 stick butter, softened
  • 4 cloves garlic, crushed or minced

Slice bread in half length-wise. Mix butter and garlic well. Spread each half with half of the garlic butter mixture and place halves together on baking sheet. Bake at 350° until bread is crusty and butter mixture is bubbly.

Thurs, 16th – Cheese Stuffed Shells, garden Salad, Garlic toast (E-Mealz P-340)

Fri, 17th – Fajitas / Spanish Rice

Sat, 18th – Pork & Cabbage Dinner

Sun, 19th – Lemon Pepper Roast Chicken, Mashed Potatoes/ Veggie

Menu Plan Monday: September 7th

September 7 – September 12, 2010 (Late Edition)

Meals last week that were well received were the following:

Tilapia Almandine/ Veggie Mix – (P-337)
Grilled Shrimp Teriyaki

The school year has started and it is even more important for us to have a menu.  It saves us time and money!  We have more things to do each evening, so saving time on supper is a must.  

This week’s menu is a pantry challenge!!  I decided to delay getting groceries by one week.  I am planning my meals around just what we have on hand.  Truthfully, I could probably do this for two weeks.  We have only gone to the gas station for milk.  This is a great way to build up your grocery budget and save money!   I only needed to spend less than $5 of our budgeted $100 this week, so I can bank this week’s money to stock up on meat when I find it on sale.  I try to plan a pantry challenge menu at least every other month. 

Here is what is on the menu this week at our house. 

Tues – Roasted Chicken/ Angel Hair Pasta/Brussell Sprouts

Wed – Baked Potato bar

Thursday – Ham/Mac and Cheese/ Corn

Friday – Cheese Beef and Bean Tacos

Saturday – Lemon Honey Chicken/ Twice Baked Potatoes/Veggie

Sunday – Apricot Pork Chops/Buttered Noodles/ Veggie

My family has been commenting how good meals have been lately at home.  Thank you E-Mealz.com!   Meals last week that were well received were the following:

I can’t say enough about meal planning.  My youngest and I have been suffering through ragweed season.  After being sick for over a month, I think Tommy will finally be returning to daycare this week and I will return to work.  I am glad we had our meal planned during his illness as we ate at home each day and it made it very easy for my hubby to step in and assist with meal prep allowing me to rest a bit. 

Here is what is on the menu this week at our house. 

Mon – 30 – Balsamic Pork Chops/ Baked Potatoes/ Green Beans (P-337)

Tues – 31 – Tilapia Almandine/ Veggie Mix – (P-337)

Wed – 1 – Spaghetti/Garlic Bread

Thurs – 2- Meet The Teacher – Classic Deli Wrap/ Cukes/ Sour Cream Chips

Fri – 3 – Crock Pot Sloppy Joes/ Corn Chips/ Celery w/ Ranch

Sat – 4 – BBQ Chicken/ Cole Slaw// Stovetop Beans (A-337)

Sun – 5 – Grilled Shrimp Teriyaki/ Grilled Vegs/ Wild Rice (p-338)

Menu Plan Monday: August 16th

August 16th – 22nd

Favorite meals from last week include, Mexican Hamburgers, Apricot Pork Ribs and Honey Nut Chicken.   I made all the meals planned, except for the One Dish Nacho Bake as I wasn’t home that evening and I forgot to prepare the meal the night before.  Overall, I am doing pretty good with sticking to the menu and my budget.

I am working on getting back into the school routine.  My meals are planned and the house cleaning and laundry are getting done each week.  I am still not doing very well with my bedtime routine at all.  That is my goal for this week, to complete my bedtime routine each night. 

In our state, school starts the day after Labor Day so I have a bit of time yet to get back into routine.    

Monday – Tuna Casserole/Sweet Peas/Pear Slices  (e-mealz -337)

Tuesday – Chicken Tender Salad/Apricot English Muffins  (e-mealz -336)

Favorite meals from last week include, Cheddar Bacon Hamburgers, Quick Chicken Quesadillas and Pepperoni and Cheese Crescents/ Salad.  I have really liked our first week of using the menu service, E-Mealz.com.  It made planning and shopping so much easier.  The meals are also very quick to make, great after a full day at work.  We actually followed our planned menu all week….no unplanned trips through the drive through!   This week our entire menu is from E-Mealz.com. 

Monday (Working Late) – Spicy Pork Chops Over Steamed Rice/Italian Green Beans (e-mealz -334) (Didn’t make)
