Sunday – Teriyaki Chicken Wings – Stir Fry Veggies

Monday –  Chicken Cordon Bleu Sandwiches – Chips and Pickles (Make Ahead) (Save to website)

Tuesday – Tuna Cakes and Slow Cooked Vegetables (Make Ahead)

Wednesday – Tortellini Tomato Chicken, Rice & Broccoli/Cauliflower (Make Ahead)

Thursday – Inside Out Chicken Cordon Blue – Salad Mixed Vegetables (make Ahead)

Friday – Brats/Fries

Saturday 27th – BBQ Chicken Legs – Mac and Cheese – Vegetable

Preheat oven 375 degrees F.

Preheat a grill pan or an outdoor gas or charcoal barbecue to a medium heat. Take a few paper towels and fold them several times to make a thick square. Blot a small amount of oil on the paper towel and carefully and quickly wipe the hot grates of the grill to make a nonstick surface. Arrange the chicken pieces on the preheated grill and cook, turn once mid-way, and cook for a total of 10 minutes. Transfer the grill marked chicken to a cookie sheet and then place in the oven. Cook the chicken for 15 minutes, remove it from the oven and then brush liberally, coating every inch of the legs with the barbecue sauce and then return to the oven for 25 to 30 more minutes, basting the chicken for a second time half way through remaining cooking time. Serve with extra sauce

Menu Plan Monday – July 18th

Week # 1: 7/17/11 – 7/31/11

It’s Monday……Menu Plan Monday! My hubby and the family are ready to be grilling!! This two week menu is heavy on summer fare and grilling!  I have the meat already marinading in the freezer!   It makes for a quick supper during the week.  It is a tad hot this week in Minnesota, so I planned meals that are grilled or stovetop in nature.  If I have to bake something, I simple set up the roaster oven on our deck and bake in there!  Sure helps to keep the house cool on this hot and sticky days!! 

17th – (Saturday) Apricot Pork Ribs / Corn / Seasoned Tater Tots

18th – Sticky Asian BBQ Chicken (new) – Chinese Cabbage Salad

Marinade (makes 1 cup)

In a small bowl, whisk 1/2 cup sweet & Sour sauce, 1/4 cup hoisin sauce, 2 TBSP ponzo or soy sauce, 2 tsp grated ginger, and 1 tsp minced garlic. 

19th – BLT’s and potato salad

20th – Chicken Caesar Salad

21st – Make Your Own Sandwhich Night – Chips

22nd – Ham Sandwiches – (2/16 – pg 60) ( bake at 350 for 20 minutes)/  Old fashioned Pea Salad/ Cucumber Salad

Ham Sandwiches

1/2 cup stick butter, softened
8 onion rolls, split
1 small onion, chopped
2 TBSP poppy seeds
1 tsp dry mustard
1 pound shaved ham
8 ounces sliced Swiss Cheese

Spread butter on cut side of rolls and reserve 1 TBSP butter.  Saute onion in remaining butter in skillet until soft, about 5 minutes.  Add poppy seeds and dry mustard.  Mix Well.  Layer Ham, cheese slices and some of the onion mixture on bottom half of each roll.  Replace roll tops and wrap in foil.  Place on baking sheet and bake at 350 for 20 minutes. 

Pea Salad

160z Frozen Peas, Blanched
1-3/4 c mild cheddar Cheese, diced
3 hard boiled eggs, peeled and diced
1/2 cup celery, diced
1/8 c. green pepper, diced
1-1/2 T. onion, minced
salt and pepper to taste
2 to 4 T. mayo

Gently combine all ingredients; cover and chill until serving. makes 4 to 6 servings. 

23rd – Marinated Grilled Steak (new)  (7/4 cookbook – pg 200) Country Fried Mushrooms, Vermicelli with Garlic (second marinade used for steak – Grilled Marinated Flank Steak with grilling directions)  – Both Marinades were good – add to online cookbook

1 Lemon
1/2 cup soy sauce
3 Tablespoons Oil
2 TBSP Worcestershire Sauce
1 Clove garlic, minced
Chopped Green Onion
2 lb Flank Steak

Squeeze juice from lemon.  Mix all ingredients except steak with pepper with taste.  Marinate steak, turning occasionally, for 4 to 12 hours in refrigerator.  Broil meat over hot coals as desired. 

Country Fried Mushrooms – Good add to site.

1 pound mushrooms
3 eggs
1-1 1/2 cups flour
1/3 cup butter

Wash mushrooms.  Gently pull stems from caps.  Dry on towel.  Beat eggs in a small bowl.  Dip mushrooms and stems in egg.  Roll in flour.  Fry slowly in melted butter and stir gently.  Salt and pepper to taste.  Brown on both sides, put lid on loosely and turn down heat.  Cook until mushrooms are done, about 20 minutes.   

24th – Marinated Pork Chops (new) (Honey Mustard Rosemary)/ Macaroni and Ham Salad /Green Beans
makes 1 cup of marinade. (very good marinade add to site!!)

In a small bowl, whisk 1/4 cup olive oil, 1/3 cup creamy Dijon mustard, 2 TBSP honey, 2 TBSP apple cider vinegar, 2 TBSP minced shallots, 1 TBSP chopped rosemary, 1 tsp salt, and 1/2 tsp black pepper. 

25th – (Monday – off) Grilled Tuna w/ Mediterranean Salsa  (new) (July 19th – pg 215) – Broccoli Salad

Grilled Tuna w/ Mediterranean Salsa

6 (1-inch) thick tuna steaks
1/2 tsp minced garlic

Mediterranean Salsa:
1 (4 ounces) can chopped ripe olives, drained
1 tomato, chopped
1/3 cup olive oil
1/3 cup feta cheese
1 tsp dried basil

Sprinkle tuna steaks with minced garlic and 1/2 tsp each of salt and pepper.  In small bowl, combine ripe olives, tomato, oil, feta cheese and basil.  Brush Salsa mixture over tuna steaks and refrigerate any leftover mixture.  Grill tuna steaks over medium-high heat about 3 to 5 minutes.  Gently turn tuna steaks and continue grilling 3 to 5 minutes.  When serving, top each steak with remaining salsa.   

26th – Pancakes / Sausage / Scrambled Eggs

27th – Taco Salad

28th – Book Group – Brats with chips

29th – Hamburger -Fries

30th – (Jakes Grad party) – Soup and Grilled Cheese Sandwiches

31st – Chicken Burritos and Mexican Salad

It’s Monday……Menu Plan Monday!     My hubby and the family are ready to be grilling!!  This two week menu is heavy on summer fare and grilling!  Most are recipes we tried and loved last year.  It feels great to break out the cedar planks again and start grilling.   Last night we disregarded our menu and made Grilled Alaskan Salmon to official kick off the grilling season!

Menu Plan Monday???

Menu Plan Monday on Wednesday…..I have been having a terrible time with back and neck pain and it seems like everything is taking me longer and I am slower.  I started a rehab program today at the Physicians Neck and Back Clinic, which made me move slower and hurt more.  Hubby helped me to get groceries or else we would have starved.   I relied heavily on E-Mealz.com for our meals for the next two weeks.  My computer at home is not set up very ergonomic so it is difficult for me to be on the computer for any period of time.

Here is our menu for the next week and 1/2

Wednesday -11th – Brats, Fries and Baked Beans

Thursday – 12th (Board Meeting)  Stir Fry

Friday – Gobbler Sandwiches/ Cucumber & Celery/ Chips

Saturday – Meatloaf/Mashed Potatoes/Green Beans

Sunday – Grilled Chicken/ Roast Veggies/ Baked Potatoes
(Make meal for Syd – Chicken Ceasar Wraps)

Monday – Chicken and Stuffing/ Salad Wedges/ Crescent Rolls

Tuesday – Breakfast Skillet/ Blueberry Muffins/ Fruit Salad

Wednesday – Kiwi Chicken Salad/ Crescent Rolls

Thursday – Sloppy Joes/ Mac and Cheese/ Strawberries

Friday – Hot Subs/ Tortilla Chips

Well at least we have a plan for meals and the groceries to go with it. We stayed under our $200 budget for these two weeks of grocery.   Hubby is needed to help me more as I struggle with back and neck discomfort. He is great!!

Sunday – 27th –  Beef Enchiladas – Spanish Rice

EASY BEEF ENCHILADAS (What’s For Dinner Site)

2 cups cooked, ground beef
2 10 oz cans Enchilada Sauce
1 1/2 cups shredded cheese (I use Kraft 2% milk cheddar)
1 12 ct. pkg. flour tortillas

Directions

1. Heat oven to 375 degrees F. Heat chicken, 3/4 cup enchilada sauce, and 1 cup cheese in skillet until warmed through and cheese is melted.

2. Spoon enchilada filling onto tortillas; roll up and place seam-side down in lightly greased 13x9x2 baking dish.

3. Pour remaining enchilada sauce over top; sprinkle with remaining 1/2 cup cheese. Bake at 375 for 15-20 minutes.

Monday – Off Holiday – Homemade Panera Tomato Soup / Grilled Cheese /Cantaloupe

Tuesday – Stir Fry with Brown Rice

Wednesday – Late HV – Easy Chicken & Rice Casserole/ Vegetable

Chicken breasts
1 cup rice
1 can your choice cream of … soup
1 packet Italian seasoning mix
2 cups boiling water
Salt & pepper, or your favorite seasonings

Mix soup, rice and Italian Seasoning with 2 cups boiling water. 

Pour into a 9 x 13 baking pan, place Chicken on top and sprnkle with paprika. 

 

Cover with foil and bake for 1 hour and 20 minutes. Put in oven at 350.

 

Thursday – Easy Taco Soup – Corn Bread

Friday – Movie NightSteak Cheese Sandwich – Steak Fries

Saturday – Biscuit and Sausage Gravy (Double Recipe) – Scrambled Eggs

Monday – MPTP – Easy Chicken Divan

3 cups cooked cubed chicken
1/2 tsp salt
1/4 tsp Pepper
1 Pkg (10 oz) Frozen Broccoli Florets, Thawed
2 cans cream of chicken soup, undiluted
1/3 cup Mayo
1/4 Cup Milk
2 Cups (8 oz) shredded taco/Mexican or cheddar cheese, divided

In a greased shallow 2-1/2 qt. baking dish, combine chicken, salt and pepper.  Top with broccoli.  In a bowl, combine the soup, mayo, milk and 1-1/2 cup cheese; pour over broccoli.  Sprinkle with remaining cheese.  Bake, uncovered, at 375 degrees for 20-25 minutes or until heated through.   4-6 servings.

Sunday – Chicken PotPie with Cheddar Biscuit Topping (Very good Add to Site)/ Salad/ French Silk Pie (very good add to site)

4 cups cubed cooked chicken
1 pkg (12oz) frozen broccoli and cheese sauce
1 can (10-3/4 oz) condensed cream of chicken and mushroom soup, undiluted
1 can (10-34 oz) condensed cream of Mushroom soup, undiluted
2 medium potatoes, cubed
3/4 cup chicken broth
2/3 cup sour cream
1/2 cup frozen peas
1/4 tsp pepper

Topping:
1-1/2 cups biscuit/baking mix
3/4 cup shredded sharp cheddar cheese
3/4 cup milk
3 Tbsp. butter, melted

In a dutch oven, combine the first nine ingredianents; bring to a boil.  Transfer to a greased 13 x 9 baking dish.

In a small bowl, combine the topping ingredients; spoon over top.  Bake, uncoevered, at 350 for 40-45 minutes or until  bubbly and topping is golden brown.  Let stand for 10 minutes before serving.

Tuesday – Stir Fry and Rice

Wednesday – (Mom working late) – Easy Pot Roast

Thursday – Country Ham and Cheese Macaroni/ Vegetable

Country Ham and Cheese Macaroni Casserole

1 lb. smoked cooked ham, chopped
1 large onion, diced
1 lb. elbow macaroni
2 c. shredded extra sharp cheddar cheese (80z)
1 c. sour cream
1 can cream of chicken soup
1/4 c. margarine, melted
1 c dry, plain bread crumbs


Boil noodles according to package instructions along with diced onion, until noodles are done. Drain. Meanwhile, mix together rest of ingredients and add salt and pepper to taste. Mix in cooked noodles/onion and add to oven safe casserole dish (greased). Pour bread crumbs evenly over noodles and then pour melted butter over the crumbs.

Bake for 30-45 minutes at 375 degrees or until cheese is well melted.

Saturday – Crustless Quiche, Sausage, Cantloupe and Biscuits

Bake at 350 for 1 hour. 

German Potato Pancakes

SundayPioneer Woman’s Chicken Spaghetti (Add to Site) / Salad  – Triple Chocolate Cake

1 pkg White Cake Mix
1/3 cup sugar
4 eggs
1 cup (8oz) sour cream
2/3 canola oil
2 Tbsp. Baking Cocoa
1/2 Cup Miniature Semisweet Chocolate Chips
1 cup Chocolate Frosting
2 Tbsp milk

In a large bowl. combine the cake mix, sugar, eggs, sour cream and oil.  Beat on low for 1 minute; beat on medium for 2 minutes.  Pour half of batter in to a large bowl.  Stir in cocoa until blended. Fold chocolate chips into white cake batter.

Spoon batter alternately into a greased and floured 10 inch fluted tube pan.  Bake at 350 for 45-50 minutes or until a toothpick inserted near the center comes out clean.  Cool for 15 minutes before removing from pand to a wire rack to cool completely. 

In a small bowl, combine frosting and milk.  Spoon over top of cooled cake. 

Monday – Holiday – Out To Eat for Jen’s Birthday

Tuesday –  Honey Mustard Chicken (Add to Site) /Cheesy Broccoli

2 lbs boneless/skinless chicken breasts

(1 T olive oil, 1/3 c Dijon mustard, 3 T honey,

1 t curry, 1 t dried tarragon)

24 oz broccoli

c shredded 2 % sharp cheddar cheese

Cut chicken into tenders and place in a large sprayed baking dish. Combine remaining ingredients and pour over chicken. Bake for 35 min @ 350º or until done.Steam broccoli until tender. Top with cheese.

Thursday – Cheesy Ham and Potato Soup

Friday – French Bread Pizza
