I had to take the morning off of work today. Erik does not have school and his PCA doesn’t come until 1:30. So I will be home with him and get a few things done around the house. I really can’t afford to take time off of work as I am getting behind again. It is my busy time of year at work. I am going to try to get some baking done, laundry and cleaning since I have to be home.
We are going to the Water Park of America this weekend for Erik’s birthday. My nephew, Nick is going to take care of our dogs. Should be interesting. I am still not feeling 100%. I think this sinus infection is lingering.
Tonight we are having Taco Bar and red beans and rice. Hopefully I can find a movie to watch as well. Well I better get busy around here.

How do you make/season your red beans and rice? Just curious. I ate them in New Orleans and haven’t really had any as good, except maybe the fast food place called “Popeye’s” . . . any suggestions about how to season everything?
I sure hope you get to feeling better soon. It’s too early in the year to be battling sinus infections (well, obviously it’s not but it would be nice to not have to).
