Taco Soup
48 oz. Randall white beans (great northern beans)
2 cans corn (I use frozen corn)
1 can diced tomatoes (I use a large can or 2 small cans)
1 packet taco seasoning
1 packet ranch dressing seasoning.
1 cup water
Mix all together, bring to boil and simmer for 30 minutes.
1 1/2 cup equals 1 point.
There are a lot of people making taco soup these days. I may have to break down and join in the fun!

No meat? Wouldn’t work for my hubby. Maybe I can add some browned ground turkey. Sounds good, though. I would eat it as is.
