Supper tonight…..hope it goes over ok…Hubby is not a fan of fish, except for orange rouge that I make.
Quick Baked Cod
Serves 6
6 cod fillets, thawed, if frozen-OR use other available white fish
Salt and pepper to taste
3 large tomatoes, chopped
2 tablespoons green onion, chopped
3/4 teaspoon basil, crushed
3/4 teaspoon oregano
3 teaspoons butter
1/2 cup shredded Monterey jack cheese
3 tablespoons grated Parmesan cheese
Preheat oven to 450 degrees.
Cut cod into serving-size pieces; place in buttered baking dish. Sprinkle with salt and pepper. Combine tomato, onion and seasonings; spoon over cod.
Dot with butter.
Bake for 8 to 10 minutes, or until fish flakes easily when tested with a fork. Sprinkle with cheeses; bake again until cheeses are melted.
