I hit most of the rooms on the house today and straightened up a bit.  I washed comforters and the shower curtain and rug.   So most of the chores are done for the weekend so I can relax.  YEAH!   We have two netflix to watch this weekend as well.   I also have a few things to complete for church as well.   But it shouldn’t take too long.  


I have my shopping list ready for tomorrow almost.  I still need to look at the cub add and clip coupons.   I will probably spend tonight finishing my library book.

Creamy Broccoli Casserole
Wonderful side dish with broccoli and cream cheese. Even
   my kids like this dish. Prep Time: approx. 5 Minutes.
   Cook Time: approx. 40 Minutes. Ready in: approx. 45
   Minutes. Makes 8 servings.

1 (16 ounce) package frozen
   broccoli, thawed
2 tablespoons butter
1/4 teaspoon salt
2 tablespoons all-purpose flour
2 cups milk
1 (8 ounce) package cream
   cheese, cubed
1 cup crushed buttery round crackers



Directions
1 Preheat oven to 350 degrees F (175 degrees C).
2 Place broccoli in a steamer over 1 inch of boiling
   water, and cover. Cook until tender but still firm, about 4
   to 6 minutes; drain.
3 Melt butter in a large saucepan over medium heat. Stir
   in salt, flour, and milk. Cook, stirring constantly,
   until thick and bubbly. Stir in cream cheese until melted.
   Remove from heat, and stir in broccoli.
4 Sprinkle 1/2 cup of crushed crackers over the bottom of
   a 1 1/2 quart casserole dish. Slowly pour the broccoli
   mixture into the dish, and top with remaining crushed crackers.
5 Bake in preheated oven for 30 minutes.

CREAMY HAM & RICE


½ cup chopped green pepper
¼ cup butter or margarine
¼ cup all-pupose flour
1-1/2 cup cups milk
½ cup mayonnaise
2 cups cooked rice
2 cups cubed fully cooked ham
1 can (8 ounces) sliced water chestnuts, drained
¼ cup grated Parmesan cheese
1 jar (2 ounces) diced pimientos, drained
½ teaspoon salt


In a large skillet, sauté green pepper in butter until tender.  Stir in flour until blended; gradually add the milk.  Bring to a boil; cook and stir for 2 minutes or until thickened.  Reduce heat to low; stir in mayonnaise until blended.  Stir in remaining ingredients; heat through.  Yield: 4 servings.
