I need the help of some of you fabulous cooks out there.   I have two turkey’s and two hams in my freezer that I need to do a cooking session with.  I need ideas of meals to prepare with each that freeze well.


I usually make Split Pea and Ham soup, Scalloped Potatoes and Ham….would love another ham soup recipe and something else.


For the Turkey, make Turkey soup, turkey pot pie, and Turkey Divan.   I want to try another reicpe with Turkey too…..


My freezer is getting pretty empty except for babyfood, so it is time to get some meals made for the family since Ham and Turkey were on sale at Easter time!

Weekend Update………


Whew as always the weekend sped by at record speed.   Friday was pretty mellow, Erik had a friend, Austin sleep over.  They were up until all hours of the night.  I heard them messing around in the bathroom in the middle of the night and had to get up to see what they were doing.   Erik had to get up for Karate on Saturday morning and that was difficult for him.


After Karate we were going to go to the park, but Tommy and Kristen both were crabby so I had to put them down for a nap.  So I ran to the store to buy stuff to make smores and some pop. etc for the bonfire.  We had our first bonfire of the season on Saturday night.  A number of neighbors come over and we enjoyed the weather and a few beers.  I actually came in the house early as I was so tired.  I put Tommy to bed at around 9:00 or 10:00 and then I went to bed and just put Kristen in bed with me.     Her parents didn’t get here to pick her and Nick up until really late!  ARGH!!   I gave Kristen a basket of board books and she looked at them on my bed with I dozed in and out. 


Even though we were all up so late on Saturday night we were able to get up and make it to church on time.  Small miracle.   They we did our usually going out to eat, but Old Country Buffet was too full so we had to go across the street to Denny’s. 


Once home Paul, Tommy and I had to go run a couple of errands.  I needed to buy some baby sun screen for Tommy and of course jarred prunes and prune juice.      Then we took Tommy for a long walk.  I took his socks off and he loved letting his toes be in the breeze while he rode in his stroller.  We went for  about a 20 minute walk, when it was nap time.  Tommy loves being outside.  I even had him out most of the night at the bonfire.   If he is cranky you can just sit outside with him and he is fine.


He is a bit crabby this weekend since his second lower tooth is working its way through.  It has almost broke through.  Well I suppose Tommy is waiting patiently in his crib for me to get him up.  I better go defrost his mangoes and feed the boy.

1 pound ground beef
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
8 ounces process cheese (Velveeta), Shredded
2-1/2 cups cooked elbow macaroni


In a large skillet, cook beef over medium heat until no longer pink; drain.  Add corn and soup.  Set aside 1/2 cup cheese for topping; stir remaining cheese into meat mixture until melted.  Gently stir in macaroni until coated.  Transfer to a greased 8-in. square baking dish.  Top with reserved cheese.  Bake, uncovered, at 350 degrees for 20-25 minutes or until heated through.


Yield: 4-6 servings

One question for you expert cooks out there.  How in the world do you shred Velveeta??   What a mess……I will buy already shredded next time, that is for sure.  I just ended up cutting it into little pieces, seemed to work just fine.

Morning….today we have ECFE Class with Tommy.  So I have to type quick and jump into the shower. 


Last night I spent the evening at Urgent Care.  I was taking a nap on the couch, when  Josh came in.  He had been at his friends Scott’s house and Scott fell and landed on Josh’s shoulder.   I took Josh to urgent care and they did an x-ray.  There is a small crack so they are calling it a fractured collor bone, but they are not sure.  So he has to wear a figure 8 and a sling for a few days.  If it still hurts him on Monday he is suppose to go see our pediatrician. 


SO needless to same I spend the entire evening at Urgent Care.  The Dr left the room to get a refferal to x-ray and forgot to come back.  I finally went out to ask, what happened.   He had forgotten about us.  ARGH!!   So then we went home, I gave Tommy a bath and quick made baby food (bananas) before those were rotten and went to bed……….WHEW!!   Never a dull moment.


Josh seems to be doing fine and is at school today.  Hope everyone has a great weekend.  We have Kristen and Nick all day tomorrow so I need to come up with something fir us to do.

Morning….  yes, it is O dark thirty and I am up.  ARgh….I didn’t sleep that well.   Actually I take that back, I slept fine until hubby comes to bed.  I went to bed hours before him so I was sound asleep when he came in.   He flicks on the hall light, which shines in my eyes and wakes me up.  He is blowing his nose…wakes me up again.  Argh…..he is hacking nd coughing, wakes me up again.  


I know the reason I sleep so poorly is of him.  Argh….I wish I was a sounder sleeper, but since the baby was born, I am such a light sleeper.   Which is interesting since I never have to get up with the baby, he sleeps through the night since December. 


Ok…I am done whining, I better hit the shower, I need to be on the road by 6:50 at the latest.  I hate early morning meetings.  I think that is the only thing I hate about being a kid social worker is that all the school like to have meetings before school.  Are they crazy??????
