Happy New Year….

I can’t tell you how much I have enjoyed the last few days getting caught up with everyone’s blogs.  I sure miss being able to post and socialize with everyone.  I hope to make more time in 2010 to blog.  It is a great way to document our lives and memories as a family.

I am looking forward to ringing in the new year this evening in the comfort of my home with those I love, my hubby and children.   I think we might play the new computer game we received for Christmas while we wait to ring in the New Year. 

I need to think about my goals for 2010 and will post about those later I am sure.   We have had a good 2009 and look forward to creating a wonderful 2010.  

As with every post lately, I am thinking about what to make for New Year’s Eve and New Year’s Day.  Our lives are so packed with traditions around food, so my kids are already planning what we should have tonight!  So I guess that means I need to go to the grocery store, after I plan some special treats for tonight and tomorrow!

  1. I just took the cream cheese out of the fridge to make our pizza dip.  Checked your recipe and it’s the same as mine.  I’m going to save your recipes for the parmesan potatoes and pull apart garlic bread.  I think they will be on our menu soon.  Happy New Year! 

  2. @troublecat – I have made the potatoes before and love them!   I don’t recall if we have had the pull apart garlic bread or not before.   I saw our your site you made a minty layer fudge…would you mind sharing that recipe with me???  I love minty fudge, but have never made it.  Thanks!

  3. @Ostara – Here’s the recipe I found on the TOH bulletin board.  It reminds me of the Fannie Mae mint meltaway candies.  It’s been years since I’ve been in a Fannie Mae store.

    Layered Mint Chocolate Fudge

    2 cups semi-sweet chocolate chips
    1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)
    2 teaspoons vanilla extract
    6 ounces white confectioners coating* or deluxe white baking pieces
    1 tablespoon peppermint extract
    Green or red food coloring (optional)
    DIRECTIONS
    In heavy saucepan, over low heat, melt chocolate chips with 1 cup EAGLE BRAND®; add vanilla. Spread half the mixture into wax paper lined 8- or 9-inch square pan; chill 10 minutes or until firm. (I put it in the freezer) Hold remaining chocolate mixture at room temperature. (you’ll probably need to reheat)

    In heavy saucepan, over low heat, melt white confectioners coating with remaining EAGLE BRAND® (mixture will be thick). Add peppermint extract and food coloring (optional).
    Spread on chilled chocolate layer; chill 10 minutes longer or until firm.
    Spread reserved chocolate mixture on mint layer. Chill 2 hours or until firm. Turn onto cutting board; peel off paper and cut into squares. Store leftovers covered in refrigerator.
