Windy820 asked for my salsa recipe.  My recipe is a combination of a couple of diffferent recipes to make a more kid friendly salsa.  So it is not a real hot salsa, but you could add more jalepenos to give it more of a kick!

The original recipe I use is from the website, Pick Your Own.  I will let you know the changes we made to the recipe.   We did not can the salsa this time.  I have in the past, but this time I looked for a recipe for freezer salsa.   It does have to cook longer to ensure that it is free of bacteria and stuff.   I use a homemade seasoning for our salsa and not the bagged stuff.   I used the baggeds stuff last year and it wasn’t as good.

I like my custom-made from fresh seasonings better, so here is the recipe for that from the  Pick Your Own website that we used, plus our slight alterations.    We use an electric chopper (food processor) to dice the seasonings fairly fine, about 1/8 inch cubes.

3 cups chopped onions (hubby says add a bit more)

1 Tablespoons of oregano

2 cloves of garlic, minced

1 cup diced assorted mild peppers (red, yellow, orange, banana, whatever you have)

1/4 cup diced, fresh cilantro (we only added 2 TBS)

1/2 teaspoon black pepper

1/4 cup diced celery

1 to 4 diced jalapeño peppers – We only use two because we like it mild.(Kid Friendly)

1 tablespoon salt (optional – I don’t put any in!)

3 (6 oz) cans of tomato paste – if you like a richer thicker flavor and texture

1 cup 5% apple cider vinegar  (or 2 cups of lemon juice)

Optional: 1 Tablespoon ground cumin

Put this all seasoning together with 20 pounds prepared tomaotes.  The tomatoes must be have the skins, seeds and juice removed.   The Pick Your Own website describes the preparation of the tomoatoes well.   Since we froze the salsa, we had to cook it for at least 45 minutes to kill all bacteria, etc. 

Bring everything (diced tomaotes and seasoning) to a boil, stirring occasionally until thickened, about 45 minutes. Cool to room temperature before packing into zip-top freezer bags.

Notes: Measure a cup or two of the salsa into re-sealable plastic bags, gently press flat, then freeze for easy and swift defrosting.
