TERRIFIC TUESDAY…….

The week is moving right along again.   Tonight I am working late and hope to accomplish a lot of paperwork.  Tommy separated very well from me this morning for preschool.  


YESTERDAY


Our morning went ok…rocky start to the day with Erik.  Tuesday morning was great though!   This is usual for the transitions between the two homes over the weekend. 


Sunday night was terrible night for sleep again.  Tommy tossed and turned and hit me in the face numerous times.  YIKES!   Per our pediatrician’s advice we started the ticket program last night.  Tommy gets 6 “sleep in Momma’s Bed” tickets a week and when he runs out he has to sleep in his bed.   We will see how it goes when he runs out of tickets.  He is very aware of the concept though.  


I worked until about 6:30 last night and then went straight to the graduation party planning meeting.  Luckily the meeting was short and I hooked up with the food committee.  Our committee won’t be meeting until early January. 


Our evening was spent picking up the house again and both my hubby and I had to complete our open enrollment for benefits at our works.   I can’t believe how much I spent each pay period on benefits.  I have almost $500.00 a pay period taken out for benefits alone.   That doesn’t include the loan payments have also come out of my checks each pay period.  WOW…will I be rich once I don’t have to have family coverage or pay daycare.  Individual coverage is free to employees.  Though we are considering having Tommy in parochial school so that will take the place of daycare costs. 


Tommy and I spent the evening doing puzzles and writing his last name.  I had to force him to stop to go to bed.  I was so tired! 


TODAY


Took Tommy to preschool.  He separated well and I got to work earlier than usual.  YEAH!!   I had morning homevisits this morning and now I am in the office until about 9;00 tonight to get paperwork done! 


Tomorrow I will be working from home as my parents are coming into town for Grandparents Day at preschool on Thursday.  I do need to try and get groceries early tomorrow morning and work on paperwork the rest of the time until my parents come.  I will need to work on some laundry too…a never ending battle against Mt Washmore!


RECIPES OF THE WEEK:


Cheesy Broccoli Soup



  • 2 Tbsp. butter
  • 1/4 cup chopped onion
  • 2 Tbsp. flour
  • 2 1/2 cups milk
  • 1 lb. Velveeta prepared cheese product, chopped into 1-1/2″ cubes for easier melting
  • 1 pkg. (10-16* oz., depending on how much broccoli you want in the soup) frozen broccoli, thawed and drained
  • 1/8 tsp. pepper
  • 1 tsp. marjoram
  • 1/4 tsp. Adobo

Melt butter over medium heat in a large saucepan (6 qt. is good) on stovetop. Add onion and saute until tender. Add flour, stirring constantly for 1 minute over medium heat.


Add milk, stirring constantly. Bring to a gentle boil and reduce heat to medium-low. Simmer 1 minute. Add all remaining ingredients and cook until cheese is melted and soup is heated through.


Menus 4 Moms recipes 
Jello Fruit Salad


  • 1 small package orange gelatin
  • 1 cup hot water
  • 1 cup mayonnaise
  • 1 cup evaporated milk
  • 1 cup crushed pineapple, drained
  • lettuce leaves

Mix gelatin in hot water until dissolved. Add all other ingredients, pour into a mold or 8×8 pan and chill until set. Serve on a lettuce leaf.

  1. Mmmm!  It’s supposed to be in the low 40’s tonight and I’m thinking that the “Cheese Brocolli Soup” may just need to be made one day this week!!  Mmm….. just imagine that with a big ol’ slice of hot corn bread right out of the oven!

    Thank you for stopping by my site today. I sure miss coming onto xanga and spending lots of time here. My children all used to sleep with me in my bed. I remember having a hard time with Douglas to get him to sleep in his bed, but once I went in to have Jasmine. Then he was out of that habit. Wasn’t easy though.

    Your recipes look so delicious. I will have to try them for sure.
