Good Morning…..What a great day, I had a good nights sleep too. Yeah.
YESTERDAY
Last night was a quiet evening. Josh was at work from 4 to 9:30 and Erik is with his mom this weekend. I really could use a quiet weekend so this is very nice!
Supper Last night……was a hit. The only thing I would do different is not put the green chilis in the Quesadillas. I also might substitute vanilla pudding for the yogurt in the parfaits as hubby doesn’t like yogurt. But Tommy and I loved it! Broccoli salad was a huge hit. Tommy loves trees, though he prefers them cooked.
Chicken and Cheese Quesadillas
1-2 cups cooked chicken
8 whole wheat tortillas
2 cups Mexican blend cheese
1 can chopped green chilis (opt.)
olive oil spray
salsa
sour cream
Preheat oven to 400°. Spray one side of 4 tortillas with olive oil spray. Lay the tortillas oiled side down on a cookie sheet (you may need to use two sheets or do two batches). Spread chicken and cheese evenly over tortillas. For extra flavor and heat, add a can of chopped green chilis for those who like spicy food. Top with the remaining 4 tortillas and spray the tops with olive oil spray.
Bake until tortillas are crisp and cheese is melted. Remove from oven and slice into triangles with a pizza cutter. Serve with salsa and sour cream.
Vanilla Yogurt and Pineapple chunks
Broccoli Salad
3 cups fresh broccoli florets
3/4 cup cheddar cheese
2 T. chopped onion
3/4 mayonnaise
1/3 cup sugar
1 1/2 T. red wine vinegar or cider vinegar
6 bacon strips, cooked and crumbled
In a large bowl, combine the broccoli, cheese, and onion. Combine the mayo, sugar, and vinegar; pour over the broccoli mixture and toss to coat. Refrigerate at least 4 hours. Just before serving, stir in the bacon.
Tommy played outside most of the evening wih daddy. My allergies were really bugging me, so I closed up the house, took a shower and watched the hurricane relief coverage. It is so hard to watch. I really breaks my heart. I dreamed last night about being in the hurricane and woke up really freaked out.
Tommy came in from outside at about 8:25 and I gave him a bath and then we went to bed around 9:00 or so. He fell asleep after two stories and so did I. OOOPS…..
TODAY
Not much planned for today. We are going to the library this morning. We also have to stop at Target to get Preschool supplies and sale items at Cub. I got my medical/daycare reimbursement this mornings so I have enough money to run both of these errands. YEAH!
I bought 2 cantaloups yesterday for 79 cents each so I am going to cut those up this morning and brown 4 pounds of hamburger for future meals too. I just love the convenience of having browned hamburger in the freezer. I hope to get to one of my chairs today and do a bit of laundry too. This evening I hope to read and not turn on the TV.

Tomorrow we have church. If it is nice we might try and take Tommy to the park for a bit. Not much else planned yet. Have a great day!

I do the Chicken Quesadillas too, but I just “fry” them in the frying pan with a little bit of Pam. And you got a great deal on canteloupes! The “sale” here is 2 for $3!
