Cookies I am making for the exchange this year…
1 cup butter or margarine, softened
1 cup sugar
1 egg
1 tsp. orange extract, divided
1/2 tsp. vanilla extract
2-1/4 cups all-purpose flour
1 tsp. baking powder
1/4 tsp. salt
sugar
1 package (12 ounces) semisweet chocolate chips
1 Tablespoon vegetable shortening
Preheat over to 375 degrees. In a large bowl, cream butter and 1 up sugar until fluffy. Add egg, 1/2 teaspoon orange extract, and vanilla; beat until smooth. In a medium bowl, combine flour, baking powder and salt. Add dry ingredients to creamed mixture; stir until a soft dough forms. Shape teaspoonfuls of dough into balls and place 2 inches apart on an ungreased baking sheet. Flatten balls with bottom of a glass dipped in sugar. Bake 5 to 7 minutes or until edges are lightly browned. Transfer cookies to a wire rack to cool.
In a small saucepan, melt chocolate chips and shortening over low heat, stirring constantly. remove from heat. Stir in remaining 1/2 teaspoon orange extract. Dip half of each cookie into melted chocolate. Place cookies on a baking sheet lined with waxed paper. Chill cookies to allow chocolate to harden. Place in single layers between sheets of waxed paper in an airtight container. Store in a cool place.

MY LASAGNA…a work in progress….
1 lb of ground beef
1 (10 oz) pkg. lasagna noodles
3 c. cottage cheese (lg. container)
2 Eggs
2 tsp. salt
1/2 tsp. pepper
2 T. parsley flakes
1/2 c Parmesan Cheese
1 lb shredded Mozzarella Cheese
1 (32 oz) jar spaghetti sauce
Brown meat and drain. Add to spaghetti sauce. Combine cottage cheese with eggs, salt, pepper, parsley flakes and Parmesan cheese. Spread half noodles in 9 x 13 inches baking dish, then spread half of cottage cheese over noodles. Add 1/3 of Mozzarella cheese and half of meat sauce. Repeat layers, ending with Mozzarella cheese. Bake at 375 degrees, covered with foil, for 1 hour and 15 minutes. Let stand for 15 minutes before serving.
Jen’s Notes: I make three of these at a time for freezing. I use 2 pounds of hamburger and I pound of sausage combined. Add small amount of sauce without meat to the bottom of pan before adding the noodles. Hubby would like the sauce to be more tomato tasting so next time add three cans of tomato paste to the sauce.
