Still recovering….

I don’t think I have shared here, but I was hospitalized on Thursday of last week.   I absolutely hate being in the hospital.  I do behave myself as a patient, but I hate it. 

Starting Wednesday night while making supper I had pains along my left arm.   I thought it was weird and commented to my hubby that my arm really hurt and I haven’t done anything out of the ordinary.   Then by bedtime my chest was beginning to hurt a little bit.   I woke up at about 2:30am with severe arm and chest pain all concentrated on the left side.   I took some pepto, thinking it might be heart burn and tried to go back to sleep.  At 6:30 when it was time to get the kids ready for school, I was feeling terrible.  Hubby got up and got the kids ready and went back to sleep.  I slept until about 12:30.  

I got up after noon and thought I might be feeling better.  I decided to get ready for work.  On my way to work the chest pains got worse again so I called the clinic to see if I could see my Dr.  The care nurse asked me a number of questions, and would not let me be seen at the clinic.  I need to go to the ER.  She wanted me to call 911.  That was not going to happen.   Against her wishes, I drove myself to the hospital from my office.  Hubby would meet me there later. 

I got all checked in and they started to try to lessen the chest pain.   Nothing really worked.  They gave me some pain meds that knocked me out and another anti inflammatory medication.  They also gave me some MOM with a pain killer in it.   None of this really alleviated any of the pain.   Finally they gave me Nitro, and that lessened the pain and bought me a night in the hospital.  ARGH!!!!

I was admitted around 8:30 and had a few more doses of Nitro that evening.  The nitro took away the pain, but make me feel terrible.   None of the Drs could really figure out what was causing the chest pain, but they wanted to rule out a heart attack.   So I saw a cardiologist and had a stress test completed on my heart.   That was on Friday afternoon.  Once the test came back that my heart was fine, I was releases with the same chest pain I came in with.  

They think it might be something viral and that it will pass, so I am home today from work.   I take motrin and tylenol and as hard as it is for me, I am trying to take it easy.   So I spend time on the computer or nap to refrain from cleaning, etc.I was thinking I should go to work today, so that meant I should stay home one more day!!  We all know I try to race back to work too fast. 

I am going to work a bit by remote desktop and do some documentations, etc.   So that is my excitement for the last few days.  I still have the chest pain off and on.  I take the Tylenol and Motrin and nebulize to alleviate any inflammation that might be going on.  Hopefully this will be gone soon!!!!!

Back to Reality….

Tomorrow it is back to work.  I am ready and not ready at the same time to return to work.  I wish I would have gotten more done around the house and read a few more books.  But i like the structure of work as well. 

Yesterday we went and got groceries.  I was a bit over budget, but no name steaks were on sale and we bought a number of those.  I do think that the food I bought could be stretched to last about 3 weeks.  So I hope that will help.

Grocery Totals:

Aldi – 124.31 – this did include a fair amount of meat
Cub Foods – 116.22 – this included 4 boxes of no name steaks and smart ones for my lunches.

Total = 240.53 – if this only lasts 2 weeks than I am about 40.53 over budget.  But if I can stretch it to last three weeks, then I am under budget!!!

Time to go clean up the kitchen and do some more laundry.  Later!

Menu 1/3/09 – 1/17/09

Saturday- 3rd – Honey Glazed Chicken Drumsticks/Cheesy Rice/ Vegetable

Honey Glazed Chicken Drumsticks

12 chicken drumsticks

1/2 C. honey

2 cloves garlic, minced fine

1/2 C. soy sauce

4 Tbsp. vegetable oil

Remove skin from chicken and cut off all fat. Combine sauce, honey, oil and garlic. Coat chicken pieces. Refrigerate for 2 hours to marinate. Preheat oven to 375 degrees. Line pan with foil. Place chicken on foil and bake 25-45 minutes or until cooked through.

 

Sun – Roast/Mashed Pots/ Vegetable

Mon – Spaghetti

Tues – Beef Stroganoff

Wed – Chicken Tortilla Soup – Six-Can Chicken Tortilla Soup

1 15-ounce can whole kernel corn, drained (substitute yellow hominy)
2 14.5-ounce cans regular chicken broth (or 3 cups homemade chicken stock)
1 10-ounce can chunk chicken (or 1 1/2 cups leftover chicken)
1 15-ounce can black beans
1 10-ounce can diced tomatoes with green chile peppers, drained

Pour corn, chicken broth, chunk chicken, beans and tomatoes with peppers into a large saucepan or stock pot. Simmer over medium heat until chicken is heated through. Serve over tortilla chips, and top with shredded Cheddar cheese. Serves: 6.

Thurs – Chicken, Ham and Rice Casserole / Broccolli

Fri – BBQ Pork Sandwiches / Fries

Sat – Cornish Game Hens w/ Bacon Rice Stuffing / Brocolli

Cornish Game Hens with Bacon Rice Stuffing

3 Cornish Game Hens
1 stick margarine
4 cups cooked long grain rice
4 stalks celery, sliced
1/4 cup chopped fresh parsley
1/3 cup butter or margarine, melted
1/4 cup white wine or chicken broth
1 medium onion, chopped
1 lb. crisply cooked bacon, cut into 1″ pieces
1/4 t. salt
1/4 t. pepper

In large bowl, stir together all ingredients except the game hens and the stick of margarine. Stuff each hen with the stuffing mixture and place in a roasting pan, any extra stuffing may be placed around the birds. Bake at 350 degrees for about an hour or until birds are done.

Sun – Sausage Lentil Soup

 Sausage Lentil Soup

  • 1 lb. smoked sausage, sliced
  • 1 lb. (about 2 cups) dried lentils, rinsed and drained
  • 1 cup ham, diced
  • 1 medium onion, chopped
  • 1 small green pepper, chopped
  • 1 medium carrot, chopped
  • 2 garlic cloves, minced
  • 1/2 Tsp thyme
  • 1/4 Tsp pepper
  • 1/4 Tsp cumin
  • 1 bay leaf
  • 2 cans (14.5 oz. each) beef broth
  • 2 cans (14.5 oz. each) chicken broth
  • 2 cups spinach, coarsely chopped

Combine all ingredients except for the spinach in a slow cooker. Cover and cook on low for about 6 hours or until lentils are tender. Add spinach and cover. Let stand 5-10 minutes or until spinach wilts. Remove and discard bay leaf.

Mon – MPTP – Egg Rolls

Tues – Hamburger Veg Soup

Hamburger Vegetable Soup


1 pound ground beef
4 cups chicken broth
4 cups water
2 (1 ounce) packages dry onion soup mix
1 (15 ounce) can tomato sauce
2 stalks celery, chopped
1 onion, chopped
1 (16 ounce) package frozen mixed vegetables
3/4 cup uncooked elbow macaroni

Place ground beef in a sauté pan and brown over medium heat. Remove from stove, drain and set aside. In a large stock pot, combine broth, water, onion soup mix, tomato sauce, celery, onion, frozen vegetables and macaroni. Bring to a boil and then simmer until macaroni is done.* Add browned ground beef, stir and serve. Serves: 4.

*Note: If you plan for this to simmer for a while, cook the pasta in a separate pot, rinse and set aside. Add pasta just before serving. If allowed to simmer with soup, pasta may turn to mush.

HAPPY NEW YEAR!!!   I am looking forward to 2009.  I am sure I will post some goals for the year and revisit my goals from 2008.  But not quite yet.   I am a bit tired tonight.   I do have to share that we had some very good soup for supper tonight.  YUMMY!!!   We made Chicken Enchilada Soup with Pico de Gallo.  My hubby made the Pico de Gallo as I just hate to mince things that small.  I have no patience!!!   but I made the soup and it was very good.   I found it on he What’s For Dinner Website.  It will definitely be added to our family cookbook as a favorite!!

We also tried the meatloaf recipe from WVCountryRoad’s Blog.  It was very good and definitely something we will make again.  My hubby also likes the meatloaf with stove top dressing in it, but I prefer this one instead!!  It is now my favorite meatloaf.  The sauce on it is very good and very kid friendly!!

Tomorrow I am home with the kids.  I need to make my menu and shopping list for the next two weeks.  We will get groceries on Saturday morning probably.   I haven’t looked through many of the Menu Plan Monday sites so I will have to browse those tomorrow morning!!  There were 229 participants last week.

It is a Bit Chilly……

I am so happy to report that it is 11 degrees below zero and my house is toasty warm.  In the 11 years of living in this house, it has NEVER been this warm.  I now know for sure that the new windows and doors were a very good investment.   The work crew is not here yet, but are suppose to be here to finish up today.  

I am off to work and hopefully can get home a little earlier.  Last night I got caught in the rush hour with snow and it took me over an hour to get home.  YUCK!!  My last meeting of the day is in Hastings, so it will still be a bit of a trek to get home.

Well I think I am going to brush my teeth and head to work.  Have a toasty warm day!!!

There was some massive amounts of connect four going on all night.  

It was a long, loud and fun night!!!  I had to get up the next morning and be at church by 7:00am to sell cookies.  Needless to say I was late!  Argh…only by 15 minutes though.   I finally crawled into bed around midnight and the party was still going strong at our house without me.   I put my ear plugs in and went to sleep.  I woke to a noise at 2:00am and found Erik doing something in his room.  Not sure what.  I told him to go to bed and the house was finally quiet!!

It was a wonderful time with family.  I am so truly blessed………………
