Slow Cooker Corned Beef

You will need: a crockpot large enough to hold your corned beef brisket, potatoes, carrots, cabbage and the corned beef brisket.

Scrub your potatoes and carrots and cut into 1-2″ chunks (whatever works best for your family) and set aside.

In a small bowl mix together 2 teaspoons yellow mustard, 2 Tbsp. brown sugar, and 1 Tbsp. apple cider vinegar. Add contents of seasoning packet from corned beef (or if you don’t have the seasoning packet, use 1 1/2 tsp. pickling spice).

Rinse corned beef (there probably isn’t a real reason to do this, I just do it :) ) and place in crockpot. Rub with the mustard mixture to completely cover the top and sides (and bottom if you have enough).

Add 1 cup of water (I generally pour this around the sides to avoid washing off the rub that I just put on the meat).

Add potatoes and carrots on top of the meat. Cover, and cook on high for 4 hours, or on low for 6-8 hours.

We cook our cabbage on the stovetop. 

I will have to have my hubby share his amazing gravy he makes for this meal.   Hopefully, I will get that from home later.

Beef Stroganoff

1 lb ground beef
8 oz sour cream
1 can cream of mushroom soup
(1 t salt, 1 t onion powder)
(¼ c water, 1 t beef bouillon cube)
1 pkg egg noodles
1 pkg frozen peas

In large skillet, brown the ground beef; drain.  Add sour cream, soup, salt, onion powder and water to skillet. Heat to a low boil; add bouillon.  Stir to dissolve; reduce heat to simmer.

Boil noodles while preparing meat mixture. Serve stroganoff over cooked noodles. Serve with steamed peas

FPU: Big Tax Return = Big Screen TV! NOT!!

There may have been a time in our lives when a large tax return meant some new expensive toy for the family.   We are no longer those people and have really changed how we look at our tax returns.

In 2010 we embarked on a new journey to become debt free after attending Dave Ramsey’s Financial Peace University class at our church.   We are still working on that journey. The entire experience has been  life changing for us.   This experience changes how we look at our tax return.   Most of our tax return is earmarked before we even receive it.  We fully fund irregular expenses we know we will experience in the upcoming year.

I must admit: This practice would most likely not be endorsed by Dave Ramsey.  He would like you to manage your money and not have the government hold onto it for you all year.  For us, it works as it actually forces us to live beneath our means.  It is a fool-proof way to save funds that we know we can’t touch until we file our taxes. If the government makes an extra 5 bucks in interest off of our withholding, then they can keep it and we’ll appreciate that this money was saved for us Smile

That being said, you can bet we file our taxes very early in the tax season.  We file our taxes the first Saturday in February.  Since we both claim “single-zero” on for payroll deductions our return is usually pretty big.

For 2014, the following will be fully funded from our tax return:

Debt Reduction – we will pay off our last credit card, if there is still a balance once we receive our tax return. (That card is down to about 1 and 1/2 payments til zeroed-out.)

Emergency Fund – will be fully funded at $2000.

Car Insurance – set aside enough funds to pay car insurance on all vehicles every 6 months to receive a discount.

Christmas – yes, we fully fund Christmas in February!  What peace of mind!  (Because you know Christmas is going to happen again this year.)

City of WBL – irregular bills are hard to budget for so we fully fund them from our tax return.  This a quarterly bill that used-to sneak up on us at times….not anymore!!

Soccer Fees –  our youngest plays traveling soccer

Camp – our youngest goes to camp each year.

Duct Cleaning –  This year we are having the ducts in our home cleaned.  Between illnesses and allergies, it seemed like a good thing to get done.  This was last done in 2007.

Summer Fun – this is a new category we are funding this year.  We found that small parties, mini-weekend-vacations and other fun events over the summer wreaked havoc on our budget.  This year we set aside extra money to go to participate in summer fun!

Training – as a licensed social worker, I need to attend 40 hours of training every 2 years to renew my license.   I need to complete 26 hours this year.  This will fund the conferences, meals and lodging for me to complete my training hours.

We should be able to fully fund all of these items from our tax return.   This is a huge relief to us to know these expenses will not have to be worried about!   As you can see there is no Big Screen TV on our list, but instead many other things that give us a huge sense of relief knowing they are fully funded for the year.  The concept of saving for future expenses is called a “Sinking Fund”.  If you want more info you can read our blog post about “Sinking Funds” and how we organize our finances.

We are different people with different priorities….we live a simpler life striving towards our goal to be DEBT FREE, (and financially secure when we retire!)

Ingredients:
2 cups diced cooked chicken
1 1/2 cups water
1 can Cream of Chicken Soup
2 cups Broccoli (I use frozen, straight out of the freezer)
2 cups Instant Rice

Process:
In a large skillet, make sure that you chicken is warm and put aside in a bowl. Then mix water and soup together and bring to a boil (now is when you add any seasonings). Turn down and mix in all ingredients remaining. Cover and cook on medium/low for 5 minutes. If you are using frozen broccoli it will take up to another 5 minutes.

Tuesday 11th – (6:30 FPU) – Tacos for a Crowd (Crock Pot)

Wednesday 12th – (4:00 Meeting) – Cheesy Bakes Fish, Parmesan Pasta and Green Bean Tomato Salad (30 mins) (Emeals # 518)

Frugal Friday: Re-Dye Faded Pants

First, I wanted to apologize to my subscribers, for some reason some old posts were sent out the other day.   I can’t figure out why this occurred, but hopefully it won’t happen again!

Today, I want to share a tip with you that I have been meaning to try for YEARS!!!  This was actually my hubby’s idea.   Hubby and I both have jobs in which we wear dress pants each day for work.  While, I have  bought many different colors of pants through the years, I prefer to wear black pants.  I try to keep my wardrobe as simple as possible.

While my pants have stayed in good condition, the color had really faded.   I was about to go out and buy new pants when I decided to try to dye my pants.   I could just throw them away if it didn’t work out, so no great risk.   We purchased a bottle of Rit Liquid Dye for about $2.00 and decided to go for it.

I was a bit nervous, but I decided to attempt the dyeing process in the washing machine.   I followed the directions on the bottle and was very happy with the results.   Over the holiday weekend I dyed 4 pairs of Docker like dress pants and two pairs of black jeans.   This little experiment saved me about $125 as I would have otherwise gone out and bought 5 new pairs of black pants, if I could have found some on sale for $25/each.

I made sure to clean out the washing machine by running a empty load of very hot water, detergent and 1 cup of bleach before washing any other clothes.  Seemed to work just great!!

I am not sure how the dyeing job will hold up, but so far we are very happy with the results!  Definitely something that I will do again in the future and it was for the savings.

Simple Living in 2014: Dresser

Hello Friends,

How are you doing with your goals for 2014??  I am still plugging away on my January goal of Spring cleaning our bedroom.   As the weeks go by I find myself wanting to spend more time in my bedroom.   It is nearly done and brings me much joy!

Believe it or not, we are still battling the illness that started on Christmas for hubby and I.  Through it all I continue to do a little de-cluttering as my energy level permits.  Today, I take my last dose of prednisone, so I anticipate  a decrease in my productivity.   I am moving pretty slowly due to strained muscles in my ribs due to excess coughing.  But I have been able to keep up with my goals by doing a little bit at a time, slow and steady wins the race.

DRESSER:  Another area that tends to get out of hand quickly, my dresser.  While I love baskets to contain items, they tend to become a dumping ground for me.   I rather throw something in the basket instead of putting it away where it belongs.

AFTER:  This really was an exercise in putting things away where they belong.  Most items in the basket didn’t belong there, I simply neglected to put them away.

DECLUTTERING WITH YOUR SPOUSE:

My hubby is a very wonderful and supportive man, but getting rid of things is not easy for him.   I have learned that while I like simple, clean spaces, he likes to keep things that he might need.   It is a careful dance we do, but I never get rid of anything of his without his permission.   This weekend he did help me with the bedroom a bit.   He went through his dresser and closet and decluttered his clothes!   He did a great job and has a lot of space in his dresser now!

Other Tasks crossed off the “to do list” this week:  Scrubbed the walls and floor, washed the curtains and cleaned out the headboard.

As you can see we are nearly done with our bedroom.  We only have the bookcase left to de-clutter and then we are moving on to the Living Room for February!   Looking forward to a good Spring Cleaning of the living room before our our new furniture is delivered.

It has been a wonderful weekend and very productive!!   Love a long holiday weekend that includes my birthday!   Hubby made my requested birthday meal, Broccoli Cheese Soup!   I love a weekend off of cooking and washing dishes.   This allowed me plenty of time to relax, cross stitch and do a few projects around the house.

Our oldest son hung out with us for the weekend and built a snow fort ( technically called a quinzee) with our youngest.  It was a two day adventure that kept them busy in the mild winter weather.  For some reason they said it was my birthday present…..no way this Mama is going into the quinzee and would definitely not sleep in it over night!
