We had the following for supper tonight.   It was a hit with everyone but Erik who isn’t so keen on meatloaf.   


MEAT LOAF PIE


 


Prep:  25 min.  Bake: 40 min


 


2 eggs


1 cup milk
1-3/4 soft bread crumbs
¼ cup chopped onion
1 teaspoon salt
1/2 rubbed sage
¼ teaspoon pepper
1-1/2 pounds ground beef
1 envelope butter and herb instant mashed potatoes
1 teaspoon prepared mustard
½ cup shredded cheddar cheese


In a large bowl, combine the first seven ingredients.  Crumble beef over mixture and mix well.  Press into the bottom and up the sides of an ungreased deep dish 9-inch pie plate. Bake at 350 degrees for 35-40 minutes or until meat is no longer pink.


Meanwhile, prepare mashed potatoes according to package directions; stir in mustard.  Drain meat, loaf; spread potatoes over top.  Sprinkle with cheese.  Bake 3-5 minutes longer or until cheese is melted.  Let stand for 5 minutes before cutting.   Yield:  6 servings –  Approx 8 points per serving.

After supper we watched Jesus Christ Superstar along with a couple of Josh’s friends.   Tommy fell alseep watching the movie tonight…..




Only Tommy could sleep like this!!!


This afternoon while I was making supper the kids enjoyed the warm weather.  They were out on the swamp sliding on the ice.   They seemed to have a good time!



It really wasn’t warm enough for short sleeve shirts…those crazy teens!



Tommy and his play-doh creation he built with Daddy. 


Erik is very happy that Josh and his friends are here.   He likes to hang out with Josh and is sad when Josh is gone at work and with friends for the weekend while Erik is here.  Erik didn’t even want to go swimming with us today, he wanted to stay with Josh.  He really looks up to his bro. 


Well I think I am going to go to bed and read for a bit after I exercise.  I hope everyone had a great day!!
